Clarified lime juice opens up the possibility to make fresh juice-stirred cocktails. While you can find at least a few other methods to clarify juices out there, I think this is the easiest. Below are some pros and cons I came across when I made 3 batches of clarified lime juice and 1 of grapefruit juice over the course of a week

PROS
- Easy
- Fast: Clarified juice in under 2 hours
- No heating or freezing
- No centrifuge or specialty tools are needed

CONS
- You need multiple products that will cost you about $35
- The yield is not great.
- Inconsistent without a centrifuge
- Not always as clear as I want

Yield
I found that you can easily get 50-65% yield by simply pouring off the clarified juice from the top without disturbing the settled solids. However, the recipe creator Garret Ricahed gave me the tip to coffee filter off the remaining liquid. When you go that, you can get a yield of 80-90% but that will take more time and multiple filter swaps.

Inconsitent
I found that sometimes the juice was super clear while other times it was cloudy. I found that one time the coffee-filtered juice came out even clearer than the initial pour off but another time it was more cloudy. The version in this video was not nearly as clear as the 2nd one I made, but the video version was clearer than the 3rd version I made. The inconsistencies make sense and probably prove the value of a centrifuge in a high-volume and commercial setting. Temperature plays a factor in Pectinex and since it's winter that was probably a large contributing factor.

OVERALL, still very happy with the results even when the yield was not great or it was not as clear as it could be. I'll be using this method for all clarified juices moving forward.

Clarified Lime Juice
500 ml of fresh citrus juice
2 ml of Pectinex
4 ml of Kieselsol
2 ml chitosan

Start by combining 500 ml of juice with 2 ml Pectinex and ½ the Kieselsol (in this case, that’s 2 mL), stir and let rest for 15 minutes. Chitosan needs to be made into a solution which I already have. There’s instruction on how to make the solution on the bag and you will need distilled white vinegar to make it. Next add in the 2 mL of Chitosan, stir, and let rest for 15 more minutes. Finally, add in the remainder of the Kieselsol and let rest for 1 hour before carefully pouring off the clear juice

Clarified Lime Cordial
250 grams clarified lime juice
250 grams sugar
12.5 grams lime peel
2.5 grams malic acid
5 grams citric acid

Add 12.5 grams of lime peel to a saucepan with 250 grams of sugar and 250 grams lime juice. Bring to a simmer. As soon as it starts to simmer turn it to low, cover, and leave it for 15 minutes. Finally remove from heat and let rest 6 hours before straining. Finally add in your acids.
