Beef, pork or lamb ribs? What's your favourite?
In this video i'm going to show you how to smoke ribs, beef pork ribs and lamb to be exact! I'm also going to try and get them finished at around the same time too!

Here's a short break down for each rib below:

Smoked Beef ribs - I don't really trim beef ribs anymore, just any excess fat I trim down to 2-3mm thick. Then i'll simply season and smoke them at around 275F/135c until they are probing tender around the 205F/96c internal mark which usually takes around 7-10 hours.
Then i'll let them rest before slicing and serving!

Smoked Pork ribs - I'll trim excess fat, remove the bottom membrane, season and smoke until i'm happy with the colour which usually takes around 2 hours.
Then i'll wrap with butter and BBQ sauce until they are probing tender which usually takes another hour or so. Then i'll finish them with one final sauce to finish before slicing and serving!

Smoked Lamb ribs - I'll remove the fat cap and trim any excess fat, then i'll remove the flap meat on the underside and score the membrane. Then i'll season and smoke until i'm happy with the colour, then wrap with some beef tallow until they are probing tender.
