Here we have a twist on the chicken club sandwich with a fennel, cilantro salad and home made croutons. This is the best grilled chicken sandwich you will have. My rub recipe is 1tbs fennel seed, 1tsp salt/pepper, 1tbs garlic powder, and 1tsp thyme. This imparts great flovor on the chicken breast and keeps it moist. I let mine marinate for 8hrs before grilling. Cooking the bacon on a cast iron griddle over the BBQ grill makes cleanup easier and adds extra flavor. The salad was so bright and amazing. It provided a great crunch for the sandwich and the croutons were a perfect treat with dinner. I hope you enjoy the twist and let me know what you think. Also should i use the Uuni 3 next time? Also the leftovers make great chicken soup, chicken and mushroom casserole, and italian dressing is great for the salad.
