GLUTEN FREE GUMBO RECIPE
1. Heat 3/4 cup rice flour and 1 cup canola oil in an 8-quart pot. Stir on medium heat until roux mixture turns golden yellow (maybe 15 minutes?)
2. Add 4 cups trinity (or 1 cup onion, 1 cup green pepper, 2 cups celery, all diced) and stir quickly.
3. Stir in 3 bunches diced green onion.
4. Add 1 cup turkey (or chicken) broth and stir.
5. Add 3 bags frozen okra (5 lbs. cut okra) and 2 tablespoons minced garlic and stir well.
6. Add remaining 7 cups broth.
7. Simmer with lid on for about 15 minutes or until okra is cooked.
8. Add 2 pounds gluten free smoked sausage and 2 pounds cooked turkey (or chicken).
9. Stir well, scraping the bottom of the pan often and simmer for about an hour.
10. Use creole seasoning (like Tony Chachere's) and add salt to taste. Serve with an "island" of rice in the middle of the bowl of gumbo.
