I mistakenly stated the following and would like to clarify:

Regarding CHILL FILTERING: St. Augustine Distillery DOES NOT chill filter their spirits! I meant to say "aren't chill filtered" but the words came out as "are chill filtered"! Chill filtering removes fatty acids, proteins and esters that often carry flavor compounds. By electing NOT to chill filter their spirits, St. Augustine Distillery can produce spirits which better maintain the flavor profile they are crafting!

Regarding GIN BOTANICALS: I stated the "vapors" are "run through a gin basket," implying that the botanical flavors are vapor infused into the gin. This is incorrect! According to Brendan Wheatley, Head Distiller, the botanicals are 'macerated' or 'soaked in the spirit' prior to distillation. Vapor infusion, in Brendan's opinion, does not 'fix' the botanicals to the spirit enough to get the intensity of flavor they're looking for.
