Potato bolani:
Serves: 3 - 4

Ingredients:
Dough:
2 cups All purpose flour/ Maida
½ tsp Salt
2 tsp Olive oil + oil for frying
Water as required

Filling:
4 Potatoes(medium), boiled and mashed
⅓ cup Green onion, finely chopped
⅓ cup Cilantro, finely chopped
½ tsp Salt or to taste
1½ tbsp Olive oil

Dip:
1 cup Yogurt
1 tsp Garlic, finely chopped
2 tbsp Cilantro, finely chopped
Salt to taste
½ tsp Black pepper, crushed
1 tsp Lemon juice
½ tsp Olive oil

Method:
In a bowl, add all the ingredients under ‘Dough’ except water and mix them. Gradually add water and mix to form dough.
Cover with a damp cloth and rest for 20 mins.

Meanwhile, In another bowl add all the ingredients under ‘Filling’ and combine.

In another bowl add all the ingredients under ‘Dip’ and mix well.

Take dough, remove cloth, and knead few times.

Make dough into 3 portions. Take each portion roll into thin sheet by dusting with flour as needed.

Spread potato filling in one half of the rolled sheet. Apply water to edges and overlap the other half to seal the filling.

Heat a pan, add oil, place prepared bolani and cook for 7 - 8 mins on each side, flipping sides in between.

Cut bolani into pieces and serve hot with the dip and enjoy!!
