Broth
* 1 large chicken
* 1 leek & ½ onion charred
* 1 leek & ½ onion
* 1 tbsp ginger
* 6 garlic cloves

Tare
* leftover cha shu marinade
* 1 cup bonito flakes
* optional, but ¼ cup toasted anchovies

Miso Sauce
* 3 tbsp aka miso paste
* 3 tbsp dou ban jiang

Aromatic Oil
½ cup ghee
1 scallion
3 garlic cloves
1 tbsp ginger

Assembly
* 500mL chicken broth
* 3 tbsp sauce
* 3 tbsp tare
* 120g noodles
* 6 slices of chashu
* 1 marinated egg
* scallions, naruto, seaweed for garnish
