Potato Masala Recipe (5-6 servings)

Ingredients -
3 tblsps oil
1 tblsp ghee (clarified butter)
3 tsp mustard seeds (Rai)
2 tblsps Urad Dal
2 tblsps Roasted Chana Dal (dadiya)
1/2 cup Cashew nut pieces (kaju pieces)
1/2 tsp asafoetida (hing)
20 - 25 curry leaves (curry patta)
8 green chillies chopped
1 inch finely chopped ginger
1/2 tsp Turmeric powder (Haldi powder)
2 cups heaped sliced onion
3 tsps salt (as per taste)
1 kg boiled and mashed potatoes
1 cup boiled water
1 tsp sugar (optional)
1/2 cup coriander leaves

Method -
1) Heat oil and ghee in a pan. Add Rai, as the Rai crackles add Urad Dal and sauté. Add roasted chana Dal and kaju pieces and sauté till the Dal turns brown.
2) Add hing, curry patta, green chillies and ginger and mix. Then add Haldi powder and mix. Add onion slices and mix. Add salt and sauté the onions. Add 1/2 cup water and cover the pan with a lid and sauté the onions.
3) As the water drys out, add boiled and mashed potatoes. Then add boiled water and sugar. Mix all the ingredients. Cook till 1 minute and then add coriander leaves and mix. Add in Dosa or serve with roti or parathas.
