In this video, I’m showing you exactly how I stretched one rotisserie chicken into four easy, low-effort, and budget-friendly meals that fed my family of four. These are real-life dinners—nothing fancy, just filling meals using a mix of store-bought shortcuts, affordable ingredients, and pantry staples.

Here’s what I made:

Meal 1: Chicken & Gravy Over Mashed Potatoes
I used the legs and thighs from the rotisserie chicken and simmered them in a packet of chicken gravy. Served it over instant mashed potatoes with a side of canned green beans. Cozy, comforting, and done in minutes.

Meal 2: BBQ Chicken Pizza
Shredded one chicken breast and tossed it with BBQ sauce. Spread it on a prepared pizza crust and topped it with shredded cheese and thin-sliced red onion. Baked until golden and bubbly. So good, and cheaper than takeout!

Meal 3: Cranberry Apple Pecan Chicken Salad Sandwiches
Inspired by the Fuji Apple Chicken Salad from Panera—this chicken salad uses the second breast, plus diced apples, red onion, dried cranberries, chopped pecans, and mayo. Served on toasted hamburger buns with chips on the side. Sweet, savory, and fresh.

Meal 4: Creamy Chicken & Wild Rice Soup
I made a quick homemade stock with the chicken carcass and pulled off the last bits of meat. Started the soup base with butter, mirepoix (carrot, celery, onion), and flour. Stirred in the stock, milk, a box of wild rice with herbs, and the shredded chicken. Seasoned with salt and pepper, and served it with toasted bread. Warm, hearty, and so satisfying.
