For my first real Dunville’s Whiskey review, we’re starting with a bang, a cask strength PX Sherry Bomb!
Now, this whiskey is sourced, most likely from the Cooley Distillery. The Echlinville Distillery (the brand behind Dunville’s) have recently released some of their own stock, but I think we will keep seeing sourced whiskey coming out under the Dunville’s brand for a few years.
The whiskey is 13 years old, and when I asked about the cask profile, they said it was about 50% of the time in Bourbon casks , and about 50% of the time in PX sherry casks, so it’s had a lot of time to pick up flavour, which you can tell just by looking at the colour!
It’s natural colour, non-chill-filtered and comes in at 56.1%ABV, so let’s dive into the tasting notes!
Tasting Notes:
Nose:
There's a big old hit of PX sherried malt on the nose, with strawberries, biscuits, and a big wrapper of PX sherry syrup. Ther's leather, tobacco, black cherry and some stewed apple the more you sit with it.
Palate:
It's rich and a little hot, and becomes more earthy the more you sit with it. There's still sweetness, but tempered with dark cocoa powder, toasted walnuts and oak spice, all wrapped up in PX Syrup
Finish:
The finish is relatively long, with dark chocolate, figs, leather, oak tannins and tobacco after a breath, but still balanced with the PX syrupy sweetness
Overall, I quite like this whiskey. It was actually a special release for Whiskey Live Dublin, so I got to try it out before I bought it, and it’s one of the whiskeys which I have found myself coming back to again and again. It’s a heavy duty sherry bomb, with great cask influence and promises that the echlinville distillery have got some great stocks of whiskey maturing.
