Roasted Red Pepper Soup Recipe
4 large red bell peppers
1 large onion, cut in quarters
3 cloves garlic, roasted
3 tablespoons olive oil
4 cups vegetable broth
6-8 medium fresh tomatoes, cut in halves (about 4 cups)
1 medium sweet potato
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon paprika
Salt and pepper to taste
Fresh rosemary leaves, for garnish

Directions: Preheat oven to 425F 1. Wash the peppers, tomatoes and sweet potato, pat them dry. Remove stems and seeds, cut in quarters.

2. Place the red bell peppers, quartered onion, and whole garlic cloves on a baking sheet. Prickle the sweet potato with a fork. Sprinkle the dried herbs. Drizzle with olive oil and roast in the oven for about 30 minutes, or until the skins of the peppers are charred and b and the onion and garlic are soft.

3. Remove from the oven and let vegetable cool. Peel off the charred skins from red peppers. Slice sweet potato and remove skin from garlic. or about 10 minutes to make peeling easier.

4. In your blender jar, add the roasted red peppers, tomatoes, sweet potato, onion, garlic and paprika and half of the vegetable broth into the blender. Blend until smooth and creamy.

5. Transfer soup to a medium saucepan, add remaining vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes. 6. Serve hot, garnished with fresh rosemary leaves. Enjoy!
