WRITTEN RECIPE

INGREDIENTS (makes 5 tacos)

Shrimp
20 large shrimp
1/2 cup olive oil
1/2 cup lime juice
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp cumin
1 tsp paprika
2 garlic cloves, minced
1/4 cup parsley, minced
1/4 cup cilantro minced
Wooden skewers (soaked in water)

Tortillas
1 1/2 cup masa harina
1 tsp salt
1 1/4 cup hot water

Cilantro Lime Crema
1/2 cup sour cream
1 tbsp mayo
1/4 cup cilantro
2 garlic cloves
1 tsp salt
1 tbsp lime

Toppings
Lettuce
Red Onion
Corn

DIRECTIONS

Combine olive oil, lime juice, salt, black pepper, garlic powder, cumin, paprika, garlic, cilantro, and parsley together in a large bowl
Add shrimp and mix to coat all shrimp. Let marinate for 1 hour
In a large bowl, add masa harina and salt. Slowly add water and incorporate with the masa harina until all water is added
Knead dough for 2 minutes until dough is no longer sticky
Cover bowl and allow to rest for 1 hour
In a food processor, blend sour cream, mayo, cilantro, garlic, salt, and lime together until smooth
Preheat grill on medium-medium high heat
Skewer shrimp onto wooden skewers. Keep the leftover marinade
Place shrimp onto grill and brush side with marinade. Grill for 2-3 minutes
Flip shrimp over and grill for another 2-3 minutes
Remove and set aside
Grill corn for 10 minutes, rotating occasionally
On stove, preheat pan on medium heat
To make tortilla, section small piece of dough (~1 tbsp) and roll into ball
Place between two sheets of plastic and press with tortilla press (other options: heavy bottomed pan, large baking dish)
Place on preheated pan and cook for 30 seconds - 1 minute. Flip and cook for 30 seconds -1 minute
To assemble: tortilla, then layer of the crema, then lettuce, then red onions, then shrimp, and finally corn
