There are are total of 13 shiv doors on The Last of Us. Each door requires a shiv in order to be opened. These can be crafted at any time provided you have the materials to do so. I advise you to always keep 3 (the max) on you at all times. You can see how many of these doors you have opened in the statistics menu under bonuses from the main menu. They will not tell you which ones you have got though. You are able to continue getting these doors through chapter select, new game or new game plus as they so carry over.
