Hey family!!! In today's all new What's For Dinner I'm sharing two Dump and Bake Dinners with y'all! A Meatball Casserole and Chicken Fajita Bowls! Both of these are soooo easy to make and you can take care of all the things while they're cooking!

Chicken Fajita Bowls:

Ingredients
1 bag (14.4 oz) frozen pepper stir-fry
1 can (4.5 oz) chopped green chiles
1 package (14 oz) uncooked chicken tenders (not breaded)
2 tablespoons taco seasoning mix (from 1-oz package)
1 package (6.7 oz) Soft Tortilla Bowls

Heat oven to 350°F. Spray 13 x 9-inch (3-quart) baking dish with cooking spray. Layer frozen pepper stir-fry, chiles, chicken and taco seasoning mix in baking dish.
Cover with foil; bake 20 minutes. Remove foil; stir. Bake uncovered 20 to 25 minutes longer or until chicken is no longer pink in center. Serve in bowls.

Dump and Bake Meatball Casserole:

Ingredients

1 (16 ounce) package uncooked rotini pasta
1 (25 ounce) jar marinara sauce
3 cups water
1 (14 ounce) package fully-cooked miniature (cocktail-size) meatballs (if using frozen meatballs, make sure that they are completely thawed before using)
2 cups shredded mozzarella (or Italian blend cheese)
Optional: Parmesan cheese and fresh chopped herbs (such as basil, oregano, and parsley for garnish)

Instructions
Preheat oven to 425 degrees F.
In a large baking dish (about 9 x 13), stir together uncooked pasta, marinara sauce, water, and meatballs. Cover tightly with aluminum foil and bake for 35 minutes.

Uncover; stir. At this point you should check the pasta to make sure that it is al dente (firm but just about finished cooking). If it’s still too hard, cover the dish and return to the oven until pasta is al dente. Then move on to the next step.

Sprinkle mozzarella over the top and bake uncovered for 5-10 more minutes (or until cheese is melted and pasta is tender).
