Watch us make this really easy soft goat cheese. You can also use cow milk to make fromage blanc. This process forms the foundation we will use for several different cheeses we are planning to make for you over the next couple months.

Ingredients used:
1 gallon goat milk (do not use ultra pasteurized)
1/8t MM100 mesophilic culture
2 drops animal rennet + 1/4c water
Kosher salt to taste. Approximately 1-2t

Heat milk to 72*F. Sprinkle culture on surface and allow to rehydrate 5 min. Stir well. Add 2 drops rennet to 1/4c water. Stir into milk. Cover and let set overnight. Drain in cheese cloth to desired texture. Salt and serve.
