Recipe for Cantonese-style Chicken Wing Stir Fry:
Ingredients:
1 lb chicken wings, washed, cleaned, and chopped into bite-sized pieces
Salt, to taste
White pepper, to taste
3-4 tsp sugar
1 tsp chicken powder (optional)
1 tbsp crushed garlic
1 tbsp oyster sauce
1 tbsp soy sauce
1 tbsp Chinese rice wine (Shaoxing wine)
1 tsp sesame oil
1 tsp olive oil
1 tsp cornstarch
For stir-frying:
1 tsp bean sauce (or fermented bean paste)
1 tsp hoisin sauce
1 bell pepper (any color), chopped into bite-sized pieces
1 onion, chopped into bite-sized pieces
Instructions:
Prepare the Chicken Wings:
In a bowl, combine the chopped chicken wings with salt, white pepper, sugar, chicken powder (if using), and crushed garlic.
Add oyster sauce, soy sauce, Chinese rice wine, sesame oil, and olive oil to the chicken.
