It is possible to can squash for frying! In this video, I show you how to can it and also how to fry it! It turns out crispy and tastes fresh out of the garden! This is an old-time way of canning it.

The brine is:
9 cups water, 1/2 cup sugar, 1/2 cup vinegar. Bring to a boil to melt the sugar.
Fill jars with squash, salt (1/2 t. pint, 1 t. quart), and cover with hot brine. Water bath can for 10 minutes pints and 15 minutes quarts.
Depending on how many you are making, you may have to double the brine.
