Schezwan Chicken with Fried Rice

Ingredients for Schezwan Sauce:
Soaked dry red chilies 8-10
Ketchup 1/2 cup
Ginger pod 1
Soy sauce 1 tbsp
Brown sugar 1 tbsp
Salt 1 tsp
Black pepper powder 1 tsp
Sesame oil 1 tbsp
Vinegar 1 tsp

Ingredients for Schezwan Chicken:
Oil 2 tbsp
Garlic (Chopped) 1 tbsp
Prepared schezwan sauce
Water 1 cup
K&N’s Stok 1 cube
Slurry (water 1/2 cup + corn flour 3 tbsp)
K&N’s Hot Tenders 780 g
Capsicum (julienne) 1 cup
Onion (sliced) 1 cup

Ingredients for Vegetable Fried Rice:
Oil 3 tbsp
Garlic (chopped) 1 tbsp
Capsicum (chopped) 1 cup
Carrot (chopped) 1 cup
Boiled rice 3 cups
Black pepper powder 1 tsp
Salt 1 tsp
Green onion (chopped) as required

Directions for Schezwan Sauce Preparation:
1. In a blender add soaked dry red chilies, ketchup, ginger pod, soy sauce, brown sugar, salt, black pepper powder, sesame oil, vinegar and blend it well. Set aside.
Directions for Schezwan Chicken Preparation:
2. In a wok heat oil and add garlic. Sauté for a minute. Add schezwan sauce and mix it well. Add water and cook for a minute.
3. Add K&N’s Stok and cook until it dissolves.
4. Fry K&N’s Hot Tenders as per instructions on the pack.
5. Cut the k&N’s Hot Tenders into slices. Add these into the prepared gravy, then add capsicum, onion and cook for 2-3 mins. Set aside.
Directions for Vegetable Fried Rice Preparation:
6. In a wok heat oil and add garlic. Sauté for a minute. Add capsicum, carrot and cook for a minute.
7. Add boiled rice and cook for a minute. Add salt, black pepper powder and mix it well. Add green onion and toss it well again.
8. Your Fried Rice is ready. Serve it with Schezwan Chicken and enjoy.
