INGREDIENTS

Honey Castella Cupcakes:
Cake Flour 60g
Butter 20g
Milk 25g
Vanilla Extract 2g
Eggs 2 (approx. 105g)
Sugar 35g
Honey 15g

Strawberry Jam:
Fresh Strawberries 500g
Sugar 85g
Lemon Juice 45g

Strawberry Filling:
Fresh Strawberries 100g
Strawberry Jam 40g

White Chocolate Ganache:
White Chocolate 80g
Heavy Cream 30g

It is very easy to deflate the batter when folding in the milk and butter mixture, so it can not be mixed too many times. When it is just well incorporated, stop mixing immediately!!

The strawberries we picked this year are so sour... They are small and sour, but they are super cute! Because the strawberries are too sour, I decided to spread the white chocolate ganache on the cupcakes, so as to reduce the sourness of the strawberries, hahahahaha~ If you are afraid of them being too sweet, just use whipped cream :D And well it's true.... these cupcakes taste super good even without the strawberries, heavy cream, chocolate, etc…

Originally I wanted to decorate them with mint (I have two pots of mint that are growing like crazy at home), but I tried several times and still couldn’t make them pretty so I changed my mind. And thyme leaves go so well with strawberries. You can see this combination in cocktails. I’ve even seen people add thyme to their strawberry jam!! They are also used in many other dishes. How can there be such a beautiful and at the same time delicious type of plant haha!!

是小时候迷恋的蜂蜜蛋糕的味道♥

材料

蜂蜜卡斯特拉杯子蛋糕:
低筋面粉 60g
黄油 20g
牛奶 25g
香草精 2g
鸡蛋 2(约105g)
糖 35g
蜂蜜 15g

草莓果酱:
新鲜草莓 500g
糖 85g
柠檬汁 45g

草莓夹心:
新鲜草莓 100g
草莓果酱 40g

白巧克力甘纳许:
白巧克力 80g
淡奶油 30g


-蛋液打发好后如果发现里面还有一些大泡泡可以用最低速打一分钟左右,中途尽量保持打蛋器稳定在一个位置,用另一只手一点一点旋转你的碗,这样来打到所有的蛋液,去掉那些大的,只留细密的小泡泡~我记得我拍了这一步,但是忘了放进视频。。。。。。。。。

-今年摘的草莓好酸啊…………又小又酸,不过小小的超级可爱!因为草莓太酸了所以临时决定在蛋糕上抹打发的白巧克力甘纳许,这样可以中和一点草莓的酸,哈哈哈哈哈哈~如果怕太甜的话就直接打发奶油抹在上面就行,随意发挥~不过确实…不加草莓啦奶油啦巧克力啦这些的,直接吃蛋糕也无敌好吃了,真的

-最后本来想用薄荷来装饰的(我家里有两盆长势疯狂的薄荷,现在已经是怎么用都用不完的程度)可是怎么摆都觉得薄荷不好看,最后临时出去买了百里香叶,真的好美哇,和草莓的味道也非常搭,调酒里面也可以见到草莓加百里香的组合,还见过有人会在草莓果酱里加百里香调味,煎牛排、烤鸡也可以用,嗷怎么有这么好看又好吃的植物嘻嘻
