A quick recipe

Beetroot mousse
To a pan add 2 cup water, 1/2 cup Beetroot and boil for 6-7 min.
Cool down and blend it.
Filter and Extract the Beetroot pulp.
To a bowl add 1/2 cup whipping cream, 1/4 cup fresh cream,5 tbsp powdered sugar and beat until you get smooth peak.
Add Beetroot pulp 4-5 tbsp and gently mix it( it should be silky smooth)
Add to serving glass and refrigerate 10-15 min.

Beetroot jelly
Beetroot juice 1/2 cup
Agar agar powder 1 tsp
Sugar 1 tbsp
Mix and boil for 2 min.
Gradually add to the serving glass (above the mousse layer)

Beetroot tuile
Beetroot juice 1/4 cup
Sunflower refined oil 2 tbsp
Maida 1 tbsp
Sugar 1 tsp
Mix well and cook in a dosa pan.
