Sodium Hydroxide (caustic soda) dissolved in water will remove the bitterness from olives relatively fast compared to other methods leaving more oils and sugars in the olive. When the chemical is exposed to the natural environment it reacts and breaks down into less harmful natural substances. Before that happens it is highly alkaline and volatile. Be careful not to come in contact with it because it will damage human flesh.
