Ingredients:

1/2 cup basmati rice

4 cups milk

1/2 cup sugar (adjust to taste)

1/4 teaspoon cardamom powder

1 tablespoon ghee (clarified butter)

2 tablespoons chopped nuts (such as almonds, cashews, or pistachios)

Instructions:

Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain and set aside.

Heat the ghee in a heavy-bottomed pan or a deep saucepan over medium heat. Add the drained rice and sauté for a few minutes until the rice grains turn slightly translucent.

Pour in the milk and bring it to a gentle boil. Reduce the heat to low and let the rice simmer in the milk, stirring occasionally to prevent sticking to the bottom of the pan.

Allow the rice to cook in the milk until it becomes soft and the mixture thickens. This can take around 30-40 minutes, depending on the rice variety and desired consistency.

Once the rice is cooked, add sugar to the pan and stir well until it dissolves completely. Taste and adjust the sweetness according to your preference.

Add cardamom powder and mix it into the kheer. This imparts a lovely aroma to the dessert.

If using saffron strands, soak them in a tablespoon of warm milk for a few minutes and then add it to the kheer. This will enhance the flavor and give a beautiful yellow color.

In a separate small pan, lightly toast the chopped nuts until they turn golden and fragrant. Add the toasted nuts and raisins (if using) to the rice kheer and mix well.
