Twice baked potatoes! So Good!

4 russet potatoes-about 8 oz a piece
10 slices of bacon
1 cup sour cream
1/2 cup of milk but only used 1 Tbsp
4 Tbsp butter
13/4 tsp kosher salt
1/2 tsp black pepper
1 1/2 cups mild cheddar cheese
8 green onions
Air crisp the bacon for about 18 minutes AC temp 390-when cool chopped/crumble
Poke potatoes with a fork, massage with oil then sprinkle liberally with kosher salt. AC for 35-45 minutes 375 degrees
When done let cool a little, cut the top off about a quarter of the top. (save tops for potato skins). scoop out inside of potato into a bow but keep 1/4 inch of potatoes son bottom and sides-this is the structure-
Add the rest of the ingredients except for only using half the cheese and 3/4 of the green onions and only add 1 Tbsp of the milk/cream and mix using a potato masher or hand mixer. Get it to the consistency you want not too loose and not too firm(sounds like the 3 bears-lol)
scoop. mixture back into hallowed out potatoes and AC at 350 for 10-15 minutes. Towards the end os cook time add more cheese to the top of the stuffed potato.
When melted remove from AC basket and garnish with the remains bacon and onions.
