Mushrooms are a tasty source of plant protein. Oyster mushrooms are a source of Selenium. Korma is a delicious way to cook them and goes well with rice, parotta or chappatis.

INGREDIENTS
Oyster mushrooms
1.5 tomato
Cumin seeds
4-5 dried red chillies
1.5 tbsp coriander seeds (or powder)
1.5 onion
Coriander leaves
Grated coconut
1.5 tsp ginger, garlic paste
Turmeric powder

METHOD
1. Heat oil in a pan and add cumin and curry leaves.
2. Add coriander and sauté.
3. Dry red chillies, desiccated coconut and turmeric are added next.
4. Cook on medium flame.
5. Turn of the heat and let it cool doWn. After that grind it to a paste in a mixer grinder.
6. Pour oil into the pan. Add mustard, cumin and curry leaves.
7. The sliced onions are added next. Add salt to help the onions soften.
8. Add ginger, garlic paste and sauté.
9. Add tomatoes and when cooked the torn up oyster mushrooms.
10. Cover with lid and allow it to cook.
11. Open the lid and add the ground gravy.
12. Add salt, coriander leaves and cover with a lid.
13. Once boiled well, the oil separates out.
14. Garnish with coriander leaves and serve!
