Bakery Style Italian Butter Cookies With Jam Filling.
Makes about 16-20 cookies
Ingredients:
113g (1/2 cup) unsalted butter, softened
60g (1/4 cup+1 tbsp) fine sugar
¼ tsp salt
1 egg yolk
1 tbsp heavy cream
1 tsp vanilla extract
1/2 tsp yellow food coloring (optional)
125g (1 cup) cake flour
16g (2 tbsp) cornstarch
Jam (any kind)
Piping tip: 1M
Instructions:
1. Put the softened butter, fine sugar, and salt in a bowl and mix with a beater until the mixture is pale and fluffy.
2. Add the egg yolk, heavy cream, and vanilla essence and mix with the beater for 2 minute.
3. Sieve the cake flour, and cornstarch and fold with a spatula until combined.
4. Pour the batter in a piping bag with a piping tip (mine was 1M). In a baking pan lined with parchment paper, pipe each cookie and gently push down to create a hole for the jam.
5. In the hole in the center of the cookies, pour 1/2 tsp of jam.
6. Bake at 350°F/180°C for 15-18 minutes.

TIPS:
1. Make sure your butter is SOFTENED not melted.
2. You must mix your butter and sugar with a BEATER.
3. The yellow food coloring is OPTIONAL
4. You can use ANY filling you prefer
5. To prevent the cookies from spreading, refrigerate the cookies for 10 minutes before baking.
