Pretty simple way to kill him quick with minimal counter attacks to sit through

EDIT: I've since found a better way (for me anyway) resulting in just one counter attack the entire fight. Open with Tidus doing Slice and Dice. This will knock over Earth Eater. No counter. Hit with Wakka's Attack Reels. He will counter with Flare. Entrust Wakka with the third members overdrive, hit with Attack Reels again and Earth Eater should be defeated.
