Amla Candy Recipe (Boiled Amla Paste Method)
Ingredients
Amla (Indian gooseberry) – 500 g
Sugar – 1 cup (adjust to taste)
Black salt – 1 tsp (ya taste ke hisaab se)
Normal salt – ½ tsp (optional, flavour balance ke liye)
Water – boiling ke liye
Method
Amla boil karein
Amla ko achhe se wash karke pressure cooker ya pan mein pani ke saath boil karein jab tak soft na ho jaye (3–4 whistles ya 10–12 min).
Paste banayein
Thanda hone par amla ke beej nikaal kar smooth paste bana lein. Pani bilkul kam use karein.
Cook the paste
Ek heavy pan mein amla paste daalein. Medium flame par chalate hue 4–5 min pakayein.
Sugar add karein
Ab sugar daal kar mix karein. Sugar melt hote hi mixture glossy aur thick hone lagega.
Seasoning
Black salt aur normal salt add karein. Achhe se mix karein.
Dry consistency
Jab mixture pan chhodne lage aur soft dough jaisa ho jaye, gas band kar dein.
Shape & dry
Thoda thanda hone par chhote-chhote candy shape karein.
6–8 ghante sunlight ya 24 ghante room temperature par sukha lein.
Storage
Airtight container mein 2–3 weeks tak fresh rehti hai
Fridge mein rakhen to aur zyada shelf life milegi
