There are clearly advantages to both, depending on which side you are sharpening and which is your dominant hand.

I decided to try out a different sharpening technique, using a combined right and left-handed approach. I know my technique when the knife is in my right hand could use some work, but I am going to keep working on it! I feel like the technique has some value, especially if I spend the time to get it more consistent with both hands.
