I find cooking with recipes to be often restrictive, rigid, and repetitive. I know many excellent home cooks never cook with recipes. Instead, they use templates, which is a general guideline to achieve the essence of the dish. The template contains essential steps to master to reproduce the signature of the dish. This offers a wide range of possibilities and adaptation to the dish, as long as the primary characteristics of the dish is retained. Using this template approach, I can generate many different variations within the framework of the template. Furthermore, I could combine the templates to achieve new versions of these dishes that are entirely of my own creation. Template-based cooking is expanding rather than restrictive. It makes cooking to be fun, interesting, and creative.
