Paella is a delicious, hearty, and versatile dish traditionally made with rice, meat, seafood, beans, and vegetables. In this recipe, we used a healthier alternative to rice - Adlai! This grain soaks up flavors from the broth and aromatics while crisp veggies add bite and balance to the entire dish.

What's more, Adlai is highly nutritious as it gives you 3 times the energy food content and 4 times the protein than that of white rice.

INGREDIENTS:
olive oil
1 1/2 cup adlai
3 cups vegetable stock
big pinch of saffron
1 onion, chopped
3 cloves garlic, chopped
1/2 tsp dried chili flakes
2 tsp smoked paprika
2 red bell peppers, sliced
2 green bell peppers, sliced
4 medium tomatoes, chopped
100g green beans, trimmed and cut in half
100g frozen peas
1 lemon, cut into quarters
2 tbsp chopped parsley
salt and pepper

Procedure:
1 Add the saffron to the hot stock, stir thoroughly and set aside.

2 Place olive oil in a large, wide pan and add the onion, cover with a lid and cook over a gentle heat for 3 minutes, stirring occasionally. Add the garlic, chili and paprika. Cook for 2 more minutes, stirring occasionally.

3 Add adlai and toast for about 2 minutes. Add tomatoes and let cook for few minutes. Pour in the stock. Season with salt and pepper. Let boil with lid on. Once it has come to a boil, turn down the heat to low and let simmer for 15 minutes.

4 Taste, season with more salt and pepper if necessary and let simmer for 5-7 minutes more. Once done, add green beans, bell peppers, and let cook for 2 minutes

5 Garnish generously with parsley. Squeeze with lemon. Serve and enjoy while warm!
