Ingredients - सामग्री
2 tbsp Oil
1 tbsp Mustard seeds
1 tbsp urad dal
¼ tsp Asafoetida / Hing
Curry leaves
1 tbsp Red & Green chilli, chopped
Salt to taste
1 inch Ginger, chopped
2 cup Semolina/ Rawa
Oil, for greasing
2 cup yoghurt/ fresh or sour
Coriander leaves, chopped
1 tbsp fruit salt /eno
Process:-
In a Kadayi dry roast semolina on medium flame for 2 mins ,then transfer it into a big bowl. Add 2 cups of curd in 2 cups of rava, 1 tsp salt and some water and mix it well. Keep aside for 20 minutes.
Now Heat oil in a tadka pan add mustard seeds, urad dal , Asafoetida, red chilli, green chilli, grated ginger , Urad dal, chana dal, curry leaves. Fry until both the dal becomes golden brown.
Put some tadka in Rava Batter and mix well.
Now add fruit salt and mix well. Grease the idli mould, pour the batter. Steam at medium to higher temperature for 10 minutes.
Your delicious, soft & spongy Rava Idlis are ready, serve them with coconut chutney aur green chutney.
COCONUT CHUTNEY RECIPE
1 fresh chopped coconut or ½ cup desiccated coconut
2 tablespoons roasted chana dal – optional
2 or 3 green chilies or 1 teaspoon chopped green chillies
½ inch ginger
salt as per taste
3 to 4 tablespoons water or add as required – for grinding
Grinding Ingredients
Take the freshly grated coconut in a chutney grinder jar or a small grinder jar.
Then add the green chili and ginger.
Next add the roasted chana dal. Also add salt as per taste. Add 3 to 4 tablespoons water.
Grind to a smooth consistency. If unable to grind or the chutney looks thick, then you can add 1 to 2 tablespoons more water.
Note
Do not add fruit salt or eno in the whole batter
at the same time. Add when you are ready to steam, add the eno salt to the rava idli batter.
