Today I am going to share one of my favorite Cantonese slow-cooked soups from my mom - “Green Papaya Chicken Feet Soup”. Cantonese slow-cooked soup, also known as lo foh tong (老火汤) or gong dong lian tong (广东靓汤)”, plays a very important part in Cantonese cuisine. More specifically for home cooking. Ingredients:

½ pack (350 grams) chicken feet
½ (750 grams) raw green papaya
1 pc of (30 grams) ginger
¼ cup of raw skin on peanut
¼ cup of dried white bean
¼ cup of dried scallop
4-6 (20 grams) dried shiitake mushroom
8 cups of water

Instruction:
1. Cut the nails from the chicken feet.
2. Blanch chicken feet, mushrooms, and dried scallops – in a pot put ingredients in cold water, turn to broil, and blanch for 5 minutes then rinse well.
3. Discard the seed and scratch the white texture from inside of the papaya, peel off the papaya skin cut to big cubes around 1.5 inches.
4. Mix everything in your pot with 8 cups of water and turn to a boil, turn to low heat and simmer for 1.5-2 hours until the chicken feet, peanuts, and white bean are softened to your desired tenderness.
5. Season salt to taste.
6. Enjoy!

Tips and facts:
1. Use raw unripe green papaya for this soup, unripe papayas are rich in vitamins, enzymes, and phytonutrients. They contain essential nutrients and minerals like potassium, magnesium, and vitamins like A, C, B and E very healthy and healing.
2. Try to scratch all the white texture inside of the papaya.
3. Cooking time might depend on how to do you like the chicken feet to be softened, if you like them very soft and off the bone when you eat it, simmer the chicken feet for 30 minutes before adding the papaya. That way the papaya won’t be too soft and melted in the soup.
4. If you can’t finish your soup, store the soup and ingredients in separate contains. That way the papaya won’t soak all the soup.

½包(350克)雞腳
½(750克)生青木瓜

1/4杯带皮花生
¼杯白扁豆
¼杯瑶柱
4-6(20克)幹冬菇
8杯水
