👩‍🍳 Potato & Leek Soup 🍜

Ingredients:
1 cup of Butter
3 large Leeks (chopped)
4 cups of Yukon Gold Potatoes, peeled and diced
3 cups of Chicken Stock
1 tbsp of Cornstarch
2 cups of Heavy Cream
Salt and pepper
8oz of Pancetta, diced

1. In a large dutch oven, add butter and leeks and cook on medium heat until leeks are translucent and tender (about 10-15 minutes).
2. Stir in cornstarch and broth and mix well. Season with 1 tsp of Salt and Pepper, then add in the potatoes. Bring to a boil.
3. Reduce to a simmer and add the heavy cream, mix well and then let simmer for about 30 minutes.
4. If you decide to add the pancetta, add the diced pancetta to boiling water and cook.
5. To serve, add some smoked paprika or cayenne pepper to the top, we also love sour cream and green onions! If you went for the pancetta, add it to the top! Enjoy!
