The silver perch is a large grunter with a small head, small eyes, a small mouth at the end of a pointed 'beak-like' snout.The species is streamlined and laterally compressed, with a spiny dorsal fin of medium height, angular soft dorsal and anal fins and a forked tail. Large specimens become very deep bodied with a large hump behind the head. In terms of colouration, they are dark grey to silvery greyish-brown on the back, silver-grey on the sides, with darker scale margins giving a checkered pattern; the belly is whitish; the dorsal and caudal fins are dark, the pelvic fins white.

Baking your whole fish wrapped in foil rather than steaming it keeps it moist. It's much easier to cook it this way. It also has the added benefit of creating an instant sauce. Silver Perch are ideal as fillets or whole, and well suited to baking, shallow frying, grilling, barbecuing and poaching.

Silver perch is particularly good oven-baked and marries well with the Asian flavours of garlic, tomato, onion and salt & pepper . It is prized in Asian cuisine for presentation as a steamed finfish. Stuffing a whole Silver Perch with garlic, onion,tomato with salt & pepper, then baking it wrapped in foil, seals in the flavours, keeps it moist and also presents wonderfully. Silver perch flesh can be relatively moist when fresh but is otherwise dry. It is best prepared with a medium-flavoured sauce.
