recipe for 6 small sunflower cheesecakes

ingredients for the crust
½ cup of oats
1/3 cup of walnuts
1 tbsp of cacao powder
8-10 dates

ingredients for the cheesecake layer
½ cup of sunflower seeds
juice from 2 lemons
zest from 1 lemon
6 tbsp of maple syrup
vanilla beans
1/3 cup of blueberries
½ cup of water
1 cup of water + 1 tsp of agar powder

instructions
1. soak the sunflower seeds in water preferably for the whole night.
2. put oats with walnuts and cacao into the blender. pulse few times. add 8 dates and process again. if the dough is not sticky enough you can add more.
3. place the crust at the bottom of forms. I used silicon baking forms which later helped me in removing the cheesecakes, but anyway you can place pieces of baking paper in each form to make it even easier.
4. drain sunflower seeds and transfer them to the blender along with the lemon juice, maple syrup and ½ cup of water. process until the paste is really creamy. place ½ of the mixture in a separate bowl.
5. in a pan mix 1 cup of water with the agar and bring it to the boil. let it cook for about 5 minutes.
6. to the blender with ½ of cream add vanilla beans and ½ of agar jelly. blend and pour in on the mini crusts.
7. to the remaining ½ of cream add blueberries and remaining agar jelly. blend and pour on top of the forms. smooth the edges with spatula.
8. place in the fridge for at least an hour. enjoy!
