These bakery style Coconut Oatmeal Muffins are moist, fluffy, chewy, full of coconut and oats flavour, and so delicious you'll want to make them every day. You’ll definitely love them!

Ingredients:
190g/ 1 ½ cup all-purpose flour
1 tsp baking soda
1 ½ tsp baking powder
1 tbsp cornstarch/corn flour
¼ tsp salt
100g/ 1 ¼ cup rolled oats
2 large eggs, room temperature
150g/ ¾ cup sugar
230g/ 1 cup sour cream, room temperature
60ml/ ¼ cup milk, room temperature
2 tsp vanilla extract
145g/ 2/3 cup extra virgin coconut oil, melted, warm
100g/ 1 ¼ cup unsweetened shredded coconut

Bake in the oven 190C/375F for 22-23 min. Cool for 5 min then transfer to a wire rack to cool completely. Enjoy!
