2 cups rolled oats
1 tsp baking powder
1/4 tsp cinnamon
1 tsp vanilla extract
1/4 tsp salt
2 eggs
1/4 cup maple syrup (honey works too)
1 and 1/4 cups milk of choice
1 ripe banana, mashed
2 peaches, diced (I saved a few slices for topping)
1/3 cup mascarpone cheese (or cream cheese would work too)

Mix your dry ingredients, then add wet ingredients. Fold in the diced peaches at the end and pour it all into a lightly greased baking dish. I greased mine with coconut oil but butter would be delish too. Dot the top evenly with mascarpone. Bake at 350 for 25 min or until a knife comes out clean. Serve with greek yogurt and fresh fruit 💕
