Ingredients:
🍃Pumpkin rice
3/4 large calabaza pumpkin or roughly 2 1/2 cups when chopped ( I remove some of the skin)
1 1/2 cups coconut milk
2 1/2 cups water
3 1/2 cups rice ( I used long grain parboiled rice)
1/2 onion
3 cloves garlic
1 tsp grated ginger
Few sprigs thyme
2 stalks scallion
1 whole scotch bonnet pepper
1 tsp turmeric
All purpose seasoning
1 tsp Allspice
Salt and pepper to taste
1/2 tbsp unrefined coconut oil

🍃Chickpeas and Cabbage
1 cup cook chickpeas
1/2 large cabbage
1/2 onion
1/2 tomato
3 cloves garlic
1 stalk scallion
Piece of scotch bonnet
All purpose seasoning ( I use a mixture of old bay and vegetable bouillon)
Dash black pepper
Unrefined coconut oil
