Sergeant Baker is generally considered an undesirable fish by many anglers so you don't see many people eating this due the number of bones. However this time I decided to give it a try as I make it a point to try a species atleast once and not be swayed by public opinion. This species has two sets of lateral pin bones running across it's body where as most fish general have only one. The bones are very small and fine so care must be taken when filleting so none are accidentally left behind. Taste wise I think it's ok eating and has a white firm flesh, it does have a very different taste compared most other fish that is hard to describe. I have only tried it panko battered but I would imagine it would be ok pan fried.

FYI this fish is also know as "dragon snapper" if you don't believe me go search this up, there even is a facebook page dedicated just for this species.
