For Sharpedo you will need to hunt down a rippling water spot (IE: near the eastern exit to the Ruins of Hope) within Poni Breaker Coast. Once there you'll just need a bit of patience and luck and you'll eventually be able to fish up a Sharpedo. Since this spot is so near an area exit line it's pretty easy to just go in/out to respawn the spot (just make sure you aren't running as you approach it).

This was recorded on Pokemon Moon, but the location should be the same on Sun.
