Friends, today I’m sharing a traditional and crispy recipe for Kothmir Bhakharwadi (Coriander Rolls). This is a perfect Gujarati tea-time snack that combines the freshness of green coriander with the crunch of a perfectly fried outer layer.
In this video, I have prepared this recipe traditionally using a brass utensil to ensure the most authentic taste and texture. Kothmir Bhakharwadi is a delightful twist on the classic Maharashtrian Kothimbir Vadi and the Gujarati Bhakharwadi. It is sweet, spicy, tangy, and perfect for the winter season when fresh coriander is abundant.

Ingredients Used:
FOR COVER
• ¾ cup Besan, बेसन
• ¼ cup Wheat Flour, गेहूं का आटा
• ½ tsp Salt, नमक
• ¼ tsp Turmeric, हल्दी
• ¼ tsp Hing, हिंग
• 1 tsp Oil, तेल
• ¼ cup Water, पानी
• 1 tsp Wheat Flour, गेहूं का आटा
• 2|3 drops Oil, तेल
FOR STUFFING
• 2 tbsp Roasted Peanuts, मूंगफली
• 2 tbsp White Sesame, सफ़ेद तिल
• 2 tbsp dry coconut powder, सुखा नारियल
• ½ tsp Dry Coriander, सुखा धनिया
• 150 grams Green Coriander, हरा धनिया
• 7|8 Green Chilies, हरी मिर्च
• ¾ inch Ginger, अदरक
• 1 tsp Sugar, चीनी
• Half Lemon Juice, निम्बू
• ½ tsp Saunf Powder, सौंफ का पावडर
• ½ tsp Amchur Powder, आमचूर
• ½ tsp Garam Masala, गरम मसाला
• Green Coriander, हरा धनिया
• ½ tsp White Sesame, सफ़ेद तिल
• 1 tsp Besan, बेसन
• ¾ tsp Salt, नमक
• 1 tbsp Sugar, चीनी
• Little Water, पानी
• 1 tsp Wheat Flour, गेहूं का आटा
• ⅛ cup Water, पानी
• Gud Imli Chutney, गुड इमली की चटनी
• Oil at Medium Flame for frying.
