It takes several years for durian trees to mature, with farmers carefully pruning the branches and ensuring the trees receive adequate nutrition.

When the spiky, aromatic fruits are ready to be harvested, timing is crucial. They must be fully ripe before falling from the tree. Skilled harvesters will look for signs, such as a strong smell and slight changes in the color of the shell. Using long poles or climbing trees, they collect the durians before they fall and have a chance to crack.

For street food vendors, durians are split open to reveal a creamy, custard-like flesh that is sold fresh to eager customers. Whether eaten straight from the shell or incorporated into desserts, durian remains a prized delicacy despite its pungent aroma.
