8-10 pcs or more jumbo shrimps

1 carrot julianne
1/2 red bell pepper julianne
1/2 orange or yellow bell pepper Julianne
1 large tomato diced
1/2 large red onion julianne
4 stalks green onion/scallions
1-2 stalks lemongrass
1/2 bunch fresh mint
1/2 bunch fresh cilantro

For the dressing
3-4 red birds eye chili peppers or any red chili pepper
8-10 cloves fresh garlic
1/2 tsp salt
2-3 tbsp sugar
2-3 tbsp fish sauce
3-4 tbsp lime juice
2-3 lime leaves
