My horse Sundance Kid, 8 year old TWH gelding, flat walk, running walk, rack and canter, he gets alittle distracted by the girls cantering in the upper arena, but he still gaits pretty well. Notice I am not bouncing in any of the gaits, you should only slide back and forth or be still in the saddle, if you are bouncing, your horse is probably not gaiting correctly and you are probably riding him past his gait.
