配料:
一、猪肉馅儿
莳萝:65克
猪肉馅儿:350克
蘑菇:80克
洋葱:一个
蒜:3-4瓣
生姜:20克搓泥
料酒:30毫升
盐:10克(加入盐洋葱中)
水:120克(搅拌时慢慢加入肉馅儿中)

二、面团
普通中筋面粉:400克
冷水:200克

制作:
水面混合后揉成没有干粉的面团,饧发30分钟以上。
在等待面团饧发的时候混合馅儿料:
先搅拌猪肉,加姜、蒜,和料酒,往一个方向搅拌。慢慢加水,猪肉吸收足够的水分后颜色变浅,变粘。
混合所有的馅儿料,拌均匀。
将饧发好的面团揉光滑,分剂子制作饺皮。
包饺子。
水开后煮饺子,中间加两到三次冷水,反复将水煮开,直到所有饺子浮在水面就好了。
依据个人口味调制蘸料,就可以享用了。

Dill: 65g
Pork mince: 350g
Mushrooms: 80g
Onion: one
Garlic: 3-4 cloves
Ginger: 20 g
Cooking wine: 30 ml
Salt: 10g (add to onion)
Water: 120g (add to the mince while stirring)

the dough:
All-purpose flour: 400 g
Cold water: 200 g

Mix water and flour, knead to form a dough and rest at least 30 minutes.
Stir the mince, add ginger, garlic, and cooking wine.Add water slowly, the mince’s color will lighten and become sticky after absorbing enough water.
Mix all the stuffing well.
Knead the dough and make it smooth,then make dumplings
Cook the dumplings in boiling water, add two to three times cold water during the process, and boil the water repeatedly until all dumplings float up.

Prepare vinegar、chives and garlic as a sauce or any other sauce you like.
