Resep Ayam Bakar Bumbu Kacang (untuk 8-9 porsi)

Bahan marinasi:
700 gr paha ayam filet
½ sdm bubuk kunyit
1 sdm bubuk bawang putih
1 sdt bubuk paprika (opsional)
1 sdt garam
½ sdt merica
1 sdt gula pasir
¾ sdt penyedap / kaldu bubuk
2 sdm santan

Bahan bumbu kacang:
75 gr kacang tanah
75 gr kacang mede
3 siung bawang putih
4 siung bawang merah
30 gr gula merah
4 lembar daun jeruk
1 sdm kecap manis
2 sdm santan
3 cm kencur (opsional)
10 buah cabai merah keriting (opsional)
500 ml air
½ sdt garam
¼ sdt kaldu jamur / penyedap

Pelengkap:
Timun kyuri
Jeruk limau
Cabai rawit merah
Nasi putih

Langkah:
1. Marinasi ayam dengan kunyit bubuk, bawang putih bubuk, paprika bubuk, garam, merica, gula pasir, penyedap, dan santan, aduk rata. Diamkan minimal satu jam di suhu ruang
2. Blender kacang mede dan kacang tanah hingga halus, sisihkan lalu blender bawang putih, bawang merah, cabai merah keriting, kencur, dan sedikit minyak
3. Tumis bumbu halus dan kacang hingga wangi lalu masukkan air, kecap manis, gula merah, santan, garam, kaldu jamur, dan daun jeruk, masak di api kecil hingga mengental, sisihkan
4. Panggang ayam yang telah di marinasi hingga matang
5. Rebus cabai rawit hingga empuk, tiriskan
6. Ayam bakar siap disajikan dengan pelengkap

Grilled Chicken with Peanut Sauce Recipe (yield 8-9 servings)

Marinade ingredients:
700 g chicken thigh fillet
½ tbsp turmeric powder
1 tbsp garlic powder
1 tsp paprika powder (optional)
1 tsp salt
½ tsp pepper
1 tsp sugar
¾ tsp MSG / stock powder
2 tbsp coconut milk

Peanut Sauce ingredients:
75 g peanut
75 g cashew
3 clove garlic
4 pc shallot
30 g palm sugar
4 pc kaffir lime leaf
1 tbsp sweet soy sauce
2 tbsp coconut milk
3 cm aromatic ginger (optional)
10 pc curly red chili (optional)
500 ml water
½ tsp salt
¼ tsp mushroom powder / MSG

Add-ons:
Japanese cucumber
Kaffir lime
Red Thai chili
Rice

Steps:
1. Marinate the chicken with turmeric powder, garlic powder, paprika powder, salt, pepper, sugar, MSG, and coconut milk. Mix well. Marinate at least 1 hour at room temperature.
2. Finely ground the cashew and peanut. Set aside, then blend the garlic, shallots, curly red chili, and aromatic ginger with a bit of oil.
3. Sauté the blended spices and the ground nuts until fragrant. Then, add water, sweet soy sauce, palm sugar, coconut milk, salt, mushroom powder, and lime leaf. Cook on low heat until thickened. Set aside.
4. Grill the marinated chicken.
5. Boil the Thai chili until soft. Set aside.
6. Grilled Chicken is ready to serve with the add-ons.
