Mozzarella Stuffed Chicken Roulade

Chicken Roulade is a French classic that has been truly adopted by the rest of the world. It is not only DELICIOUS but really fun to cook. With all kinds of options for fillings, this is what really make this dish special.

Succulent chicken stuffed full of mouth-watering flavours. We used TASTY sun-dried tomatoes and mozzarella cheese, and to bring everything together a touch of scallion tips.

Many recipes call for this dish to be baked in the oven. However, we found that this tends to dry the chicken out, so we opt to poach and sear. Not only does this allow you to retain that all important moisture in the chicken but this method also allows all those flavours to really infuse themselves.

The GOOD thing about this recipe is that it can be made, poached and left in the fridge for up to 3 day; ideal for dinner parties or a weekday meal made well in advance. You can experiment with many great and wonderful flavours, this dish just keeps giving.

Chicken Roulade
Serves 2

For this recipe you will need:
• 2 chicken breasts
• 50g hard mozzarella cheese
• 40g sun-dried tomatoes
• 10g butter
• 2 scallions
• 1 clove of garlic
• 2 sprigs of thyme
• salt and pepper
• olive oil for cooking

Chicken Roulade is a French classic and a tasty way of preparing chicken. With this recipe I would recommend mostly white wines with low acidity and light aromas as well as light rosé wines.

• Vermentino di Sardegna from Italy
• Soave Classico from Veneto in Italy
• Assyrtiko from Santorini in Greece
• Picpoul de Pinet from France

Rosé wines
• Rosé the Provence in France
• Cerasuolo from Abruzzo in Italy
• Zinfandel Rosé from California in US

Light sparkling wines like Prosecco di Valdobbiadene or a Cava will go very well as well.
