Coconut Candy, delightfully sweet and tasty cube of grated coconut that usually done for festive season.

Ingredients
2 cups of fresh coconut grated, only white part
0.5 cup condensed milk
1 tsp vanilla essence
a pinch of salt
1 tsp rose water / rose essence, optional
2 screw pines / pandan leaves
0.5 cup sugar
0.5 tsp food colouring

1. Mix vanila essence, salt, rose essence, condensed milk together and keep aside
2. Add 2 cups of grated fresh coconut (white part) into a pan.
3. Roast the coconut using medium heat till no liquid stick to coconut.
4. Add pandan leaves, sugar, food colouring and condensed milk mixture and keep stirring till well combined, stick together, and totally dry.
5. Remove the pandan leaves and off the flame.
6. Transfer the candy to butter coated tray.
7. Make the cuts while still hot.
8. Transfer to plate when completely cool.
