The potato soup is a staple in many countries and can taste significantly different, depending on local ingredients. In this episode we cook the vegetarian German "Kartoffelsuppe" and the Ecuadorian "Locro de Papa".

These two healthy, vegetarian potato soup recipes yield very different results. And even though Germany often wins (at least FIFA World Cups), this Best Potato Soup Title goes to Ecuador!

Ingredients for the German potato soup:
carrots [200g / 7oz]
celery root (or stalks, if you prefer) [200g / 7oz]
onion [200g / 7oz]
leek [light colored parts]
mealy potatoes, e.g. Russet [500g / 1.1lb]
freshly ground nutmeg [1 tsp]
vegetable stock [1 liter/ 1quart]
if stock not rich enough, add 1 bay leaf and 2 cloves
salt & black pepper to taste
remove bay leaf before blending
top with fresh parsley (and a parboiled sausage, e.g. Frankfurter)

Ingredients for the Ecuadorian potato soup:
Achiote / Annatto seed infused oil [1.5 tbsp]
Butter [15g / 1 tbsp]
Thick spring onion, not leek [1 cup chopped]
Cumin [2 tsp]
Salt [2 tsp]
1 crushed garlic clove
mealy potatoes, e.g. Russet [600g / 1.3lb]
hot water [750 ml / 3 cups] should cover potatoes well
milk [250 ml / 1 cup]
salt & pepper to taste
serve with toppings
avocado
Queso Fresco, e.g. Feta
Queso Blanco, e.g. low moisture mozzarella
cilantro
