Jauzi Halwa from Maimoona Yasmeen’s Recipes

Ingredients:

Jaiphal/Jauz (nutmeg): 2 whole
Balai wala doodh (whole milk): 1 litre + 1/4th cup
Asli ghee (clarified butter): 3 tablespoons + for garnishing
Shakar (sugar): 100 grams
Khane ka zafrani rang (food saffron colour): 1/4th teaspoon
Asli zafran (pure saffron sticks): a few
Kate hue badam pista aur chandi ka warq (optional): sajane ke liye (as per the requirement for garnishing)

Procedure:

1. Jaiphal ko grind karke ya kuchal kar bareek powder bana lijiye aur rakh lijiye.

2. Ek litre doodh ubal lijiye, aur is mein spoon chalate rahiye.

3. Dheemi aanhc par ise pakaiyye, aur beech mein milate rahiye.

4. Atraaf se jo balai jum jaaye use spoon se nikal kar phir se pakte hue doodh mein dalte jaiyye.

5. Jab doodh sookh jaaye, ise spoon se milate rahiye ke yeh daanedaar ho jaaye.

6. Asli ghee, shakar aur khane ka zafrani rang, pau cup doodh (1/4th cup milk) mein milakar daliye.

7. Ab is mein jauz ka powder daliye.aur milate rahiye ke ghee alag hone lage.

8. Agar aap chahen tab rang kuchh aur badha sakte hain ke iska zafrani rang ubhar kar aaye.

9. Teen se chaar minute tak ise bhuniye

10. Jauzi halwa tayyar hai, ise asli ghee se sajaiyye, agar aap chahen tab is par kate hue badam, pista aur kaju bhi daal sakte hain aur chandi ke warq se bhi ise saja sakte hain.
